RECIPE: Tasty Tuna Tortilla Wrap

As you head into a new school year, finding tasty, healthy, and QUICK meals can be a challenge for your picky eater! We encourage you to jazz up your lunch with a bento box! A bento box is a single-portioned packed meal that is common in Japanese cuisine. A traditional box comes with rice or noodles, fish or meat, and some yummy veggies, but you can make it your own! Add this Tasty Tuna Tortilla as a bento box item!!

 

1 100% Whole Wheat Tortilla

1 can Tuna

½ cup Plain Greek Yogurt, divided

1 small Carrot, julienned

¼ avocado, sliced thin

4 spinach leaves

1 tsp honey

 

In a small bowl, mix the tuna with the 2 TBS of yogurt. Spread the tortilla with tuna mixture. Layer on top, the spinach, carrot, and avocado. Roll the tortilla and slice into 1-2” slices. Place in entrée compartment of bento box. Mix strawberries and blueberries. Place in another compartment. Mix remaining yogurt with honey and place in a small container for dipping the fruit.

 

This meal incorporates healthy fats in the avocado, lean protein in the tuna, dairy from yogurt, and high fiber carbs from the tortilla. The fresh berries are a healthy source of fruit that is high in antioxidants.

 

Try swapping the tortilla out for bread, flattened by a rolling pin and/or swapping the tuna for leftover chicken or lean turkey for additional options.
